| 9 a.m to 1 p.m: Ayurveda Aahar The Scientific Diet |
| Nutritional recommendations in Ayurveda are based on a thorough understanding of Prakriti (singularity), time, place, and circumstance. They are based on observation and experience, and their suitability can and must be verified in real time. |
| While the primary consideration in selecting appropriate foodstuffs must be the diathetic tendency (vata, pitta, kapha preponderance), one must also evaluate the effects offoodstuffs on the mind (sattva, rajas, tamas), physiology (prana, agni, ojas), andpredominance of elemental states of matter[field (space), volatile (air), radiant (fire),liquid (water), and solid (earth)], as well as suitability according to the developmental (lifestage) and occupational characteristics of the individual. |
| If one understands the principles guiding Ayurvedic nutrition, there is no need to memorize lists of favored and prohibited foodstuffs, as one can readily identify thosefoods that are suitable for a specific time and a particular place and circumstance byrelying on the senses, and in particular the sense of taste.For each substance, one can readily identify flavor, intrinsic temperature, emollience (moist or dry quality), and relative weight or density. |

| 2 p.m to 6 p.m: Common Symptoms “Effective Remedies” with Ayurveda |
| This 4 hrs. workshop teaches you how to determine the different body types (Vata, Pitta, and Kapha) and mind types (Sattvic, Rajasic, and Tamasic) of people and throws light on their relation to food. It also helps you suggest a diet-chart for your patients to pacify the aggravation of their particular disorder-causing Dosha. |
| In addition to this, the workshop informs you about home remedies to fight some common diseases and disorders using vegetables and herbs easily grown at home. You will be given knoweledge on the Ayurvedic way of cooking, on Indian spices, and the techniques for their storage. |
